I wonder if any body has tried ArcGIS to draw buffers of variable widths. The one I know only helps draw buffers with fixed-width. I have a watershed and want to draw variable width buffer around streams or river. Any help will be appriciated.

Would you like to visualize watershed surface changes? or just apply buffering on rivers and streams separated.

Here is what I want to do. There is a watershed where the land is very expensive and farmers are reluctant to spare their lands for a regular size fixed width buffer. I want to suggest a variable size buffer so that calculating the cost/benifit ratio will help me convince farmers to adopt this this technique. My variable buffer may increase in total area than the fixed width buffer but the aim is to protect the streams, river and other ponds from pollutants.
For above senario, I would also be visualizing the buffer as the report will contain the maps alos. If visulizing is not possible, I would be compromizing on calculating and drawing a buffer of variable width. For example small width in the beginning and a larger width as the stream and river get more water before they fall into ocian. Thanks.
