If I understand your question correctly, this is what you do. Right click on the theme's name in the table of contents and pick "Properties". In the Layer Properties window click on the "Symboloby" tab at the top. On the left side in the '"Show" window you will see "Features - Single Symbol" selected; that is what you are currently viewing. To change this click on "Categories" and it will open up to 3 choices. Pick "Unique Values". Also in the Symbology window is a small window to the right of the "Show" window called "Value Field". Click the little black drop-down arrow on the right side. You will see a list of the field names that are found in that theme. Pick the field name that has the attributes that you want to display (soil type). Now click on the "Add all values" button near the bottom of the screen. You should see the 5 soil type attributes now displayed in the window. You can change the colors/symbology of each soil type to be what you want it to be by double clicking on the colored box next to the attribute.
